This visit to Italy falls under the category of “Special Discoveries” and is a real surprise.

We gladly accepted the invitation of the young wine-growing estate owners (3rd generation) Sebastiano and Nina Righetti to the wine-growing estate Crosarola in Fumane in the wine region Valpolicella. How nice it is to spend an evening in a cosy atmosphere in the wine cellar of the up-and-coming Italian winegrowers with wonderful wines, accompanied by sausages and cheese specialities.

Although just the grape harvest was in full swing, they took more than enough time for us to give us a nice afternoon and evening. Even the Senior Chef joined us and we talked to him with “hands and feet”.

Winegrower history: From grapegrower to winegrower

Sebastiono Righetty originally followed the tradition of his father and grandfather. He took over the cultivation of high-quality grapes on his own 3 vineyards and delivered the harvest to other winegrowers. In the year 2000 he made the courageous decision not to be a grape supplier anymore, but to found his own company and to produce his own wine under the brand name CROSAROLA. A lot has happened in Fumane since 2000. He is an established winemaker and his quest for quality has brought him many successes and many loyal customers.

    This Valpolicella Classico wine comes from traditional grape varieties such as Corvina, Corvinone, Rondinella and Molinara, hand-picked, fermented at a controlled temperature (fermentation lasts 8 days, during which time the temperature is always controlled) and stored in stainless steel tanks to preserve the freshness of the fragrances.

    Dry, fruity, with a clean finish, Valpolicella Classico is an ideal table wine to accompany all dishes and is excellent with typical Mediterranean dishes.

    The red wine Ripasso is a wine with a higher alcohol content. The grapes Corvina, Corvinone, Rondinella and Molinara form the basis of this cuvée, produced in a kind of “recycling technique”.

    Immediately after the manual harvest, the grapes are crushed and fermentated in barrels. During the fermentation the complete glucose is converted. Next year the “raw wine” is fermented a second time with the sweet marc from the Recioto and Amarone production. Thanks to this “Ripasso process” the Ripasso wine gets much more structure and intense bouquet.

    In the colour dark ruby red, the aromas are reminiscent of ripe red berries and field herbs. The taste is fruity, but dry, full-bodied and round with a long finish.

    Its qualities are particularly emphasized when it accompanies raw or cooked meat (sausage) and mature cheese.

    This red wine Cuvee comes from wines from 2 vintages. The first vintage is from 2008 and the second vintage from 2009. The grapes used are Cabernet Franc, Sangiovese, Rebo and Teroldego (40% of El Boteghin), the remaining 60% are from Corvina, Rondinella and Corvinone.

    The grapes are dried for 3 months and then fermented in stainless steel tanks. The wine is then stored in American oak barrels for 6 months.

    In the red wine glass the wine presents itself very dark ruby red, smell reminds of sweet smell of red flowers, while the taste reminds of the small red fruits raspberry and mulberry.

    This cuvee is recommended with red meat and all cheeses and, for those who like it, very good with dark chocolate.

    This special and dense red wine Amarone is produced exclusively with the best grapes (70% Corvina, Rondinella 10%, Corvinone 15%, Molinara 5%). The grapes are harvested by hand and carefully placed in crates. Afterwards they are dried for about 3 months in a protected and naturally ventilated environment until the end of January. The semi-dry grapes (almost concentrate) are then pressed.

    The fermentation takes a long time. During the fermentation the temperature is continuously controlled. The Amarone is initially stored only in wooden barrels. Only shortly before bottling in wine bottles does it remain in steel tanks for a short time.

    This winemaking process produces a very special wine product with a long shelf life of 15 years and more.
    The colour is deep ruby red with violet reflections while still young. The wine bouquet is intense with taste of wild berries and spices. Amarone is excellent with roasted red meat, any game and mature cheese. However, it is usually consumed as a meditation wine.

    Crosarola Recioto Valpolicella Classico

    This traditional sweet wine is made from the ripest Corvina grapes and together with a variation of Rondinella, Corvinone, Molinara grapes.

    The name of this wine comes from the grape selection technique. Only the ripest part of the grapes, called “recia” in dialect, is dried in boxes by natural ventilation at room temperature. The pressing of the grapes begins later – in the middle of January.

    After pressing, a slow fermentation at low temperatures is stopped. As soon as the fermentation has reached 13-14% vol alcohol after a few months, the fermentation is stopped (stable level between alcohol and residual sugar) and the remaining residual sugar brings the sweet wine to light.

    The further wine storage takes place in wooden barrels. Finally, the wine is bottled in smaller bottles.

    The final colour of the wine is deep garnet red and the scent is close to Amarone. The Recioto is a full-bodied wine with a sweet and fine taste. In Verona it is traditionally drunk with dry biscuits, but it is also an ideal aperitif when cold, or tastes excellent with dark chocolate.

    Brief information: The typical wines from the Italian Valpolicella wine region

    1. Valpolicella Classico
      Easy to drink basic wine for every day and occasion. Red, tending to garnet red after ageing. Wine smell is vinous with a pleasant aroma, delicate, characteristic, sometimes with bitter almonds.
    2. Valpolicella Superiore
      The quality Superiore is characterized by a low acidity and a harmonious bouquet. It should be drunk at a good temperature (16-17 °C).
    3. Valpolicella Superiore Ripasso
      Ripasso mixes the Superiore quality with the marc of dried grapes. This gives the wine more colour, aroma and sugar, which causes it to ferment again and thus has a higher alcohol content. Drinking temperature: 17 °C.
    4. Valpolicella Recioto
      Recioto della Valpolicella is obtained from grapes that have been stored for at least 120 days on special drying equipment before being processed. The wine has an alcohol content of at least 14%. It has a strong garnet red colour and an aroma reminiscent of cherries and spices (cinnamon, cloves). The unfermented sugar provides a sweet, round taste.
    5. Valpolicella Amarone
      Dried grapes are also used for the Amarone. Unlike Recioto, the finished wine must be stored for at least two to four years. If the wine is stored even longer, the quality “Riserva” is obtained. Amarone is often aged in oak barrels. In contrast to Recioto, almost all sugars are fermented here and the alcohol content is correspondingly high: 15-16%. Amarone has a very dense and velvety aroma and is one of the most valuable wines in Italy. Drinking temperature: 17-20 °C.
