MOUNTAIN HARD CHEESE – SO SPECIAL THAT IT HAS BEEN PROTECTED BY THE EU
The term “BERGKรSE” stands for a artisan alpine hard cheese today. The EU origin protected alpine cheese is cheese from a mountain area such as Au in the Bregenzerwald or from an alp. It is produced according to specific manufacturing regulations and has a specified quality. Researchers at ETH Zurich have even shown that alp cheese contains significantly more polyunsaturated fatty acids and conjugated linoleic acid than industrially produced cheese.
