Cheeses with spices mixed into the cheese dough usually do not develop cheese flavor through elaborate aging. Therefore, spice blends are often used.

The basis of Berchtold’s Blümlekäse consists of the best sliced cheese wheels from various selected Bregenzerwald dairies. These are then transferred to the cheese cellar of the Berchtold family where their care and maturation begin.

Characteristics of Flower Cheese
This fine cheese with a melting, smooth texture and occasional cherry-sized holes is a special treat. Its mildly spicy flavor and medium-firm texture make it a regular favorite among locals and guests alike.
The distinctive characteristics of Chili Cheese are largely influenced by the high-quality Alpine milk and the unique Vorarlberg Alpine flora, resulting in the cheese’s special quality.
A maturation period of a full 3 months allows the aroma to fully develop.
Historical Background of Vorarlberg Cheese
Cheese has been produced and matured on Alpine and valley dairies in Vorarlberg since the early 20th century.
The production method of “fat cheese” (as opposed to lean cheese like Sura Käs in Montafon) originally came from Switzerland and quickly spread through the Bregenzerwald.
The sliced cheeses are made from natural (non-thermized, pasteurized or centrifugally purified) raw milk (hay milk) with at least 45% F.i.D.
Due to small-scale farming, which provides the raw material, and the Alpine dairy tradition, the artisanal production and traditional care of high-quality cheese have been preserved to this day.

- The cheese rind forms when the cheese wheels are dipped in a iodine-free salt bath after shaping.
- The salt bath promotes rind formation and protects against bacteria. Depending on the type of cheese, the wheels remain in the salt bath for varying durations.
- The salt extracts water from the cheese wheel. Afterward, the wheels are regularly treated with iodine-free salt and brine until fully matured.

For large pieces or a whole cheese wheel that you wish to store for more than 2-3 weeks, we recommend using a cloth.
Take a clean cloth, soak it in salt water (just add a bit of salt), wring it out, and wrap the cheese with the damp cloth. Repeat this process every 2-3 days.
If the cheese becomes slightly white or develops spots, it is usually salt or protein that crystallizes due to temperature differences. These areas can be easily wiped off.
Using aluminum foil is possible (though we advise against it), if punctured with many small holes for airflow.
Avoid Bread Contact - Yeast Fungus
Please do not store cheese on boards, woods, or surfaces previously used for bread. The yeast residue from bread causes cheese to mold quickly.
