MOUNTAIN HARD CHEESE – SO SPECIAL THAT IT IS EU PROTECTED DESIGNATION OF ORIGIN
The term “MOUNTAIN CHEESE” today refers to a hard cheese. The EU protected designation of origin (PDO) mountain cheese comes from a mountain region such as Bezau in the Bregenzerwald or from an alpine pasture. It is produced according to specific production guidelines and has a defined texture. Researchers from ETH Zurich have even proven that alpine cheese contains significantly more polyunsaturated fatty acids and conjugated linoleic acid than industrially produced cheese.
