Naturally lactose-free, and even the table salt used is iodine-free.

No matter the other ingredients for the guests, raclette always fits. Depending on how the raclette is enjoyed, we have two recommendations:

Raclette Bread as Hand-Food

You’ll need good classic black bread slices from the bakery, onion rings, and ground pepper or chili. Spread the melted raclette cheese over the bread slice, then add onion rings and sprinkle with pepper or chili. Done.

Raclette as a Plate Dish with Potatoes and Other Ingredients

For this, the raclette grill is usually placed at the center of the table, accessible to all guests. Potatoes on the plate are drizzled with melted raclette cheese.   • Raclette is a soft-melting cheese, typically in flat, round wheels with a diameter of 29 to 32 cm, a height of 6–7.5 cm, and weighing approximately 6 kg. The cheese paste is ivory-colored, soft, sliceable, and has few or no small holes.
  • The rind is dry and whitish or brined to become yellowish to reddish. It can be eaten if the wheel is made without preservatives.
  • Designed for grilling, raclette melts evenly and without oil separation, making it suitable for fondue and other cheese dishes. It’s also excellent on cheese platters, as a dessert, or as a snack.

Proper storage of raclette cheese

If you want to store large pieces or a whole raclette cheese wheel more than 2-3 weeks, we recommend the use of a tea towel. To do this, take a clean tea towel, soak it in salted water (just add a little salt), squeeze it out and wrap the cheese with the damp cloth. Ideally, this process is repeated every 2-3 days.

If the cheese turns white or stains it is usually the salt or protein that crystallizes due to the temperature difference. These places are easy to rub off.

The use of aluminum foil is possible (but we advise against it) if it is supplemented with many small holes because of the air supply.

No bread contact – yeasts
Please never place the cheese on boards, wood, documents, etc., where bread used to be. The yeast residues of the bread quickly make the cheese moldy.
