Red Deer Biter Sausage Tips | Quality Standards

A key quality factor in sausage production is the quality of the meat used. The more pure muscle meat and the less connective tissue-rich pieces in the salami sausage, the higher the quality.

The longer a sausage can dry or mature, the more intense its taste and aroma become. The drying and maturation time is usually indicated by the firmness of the sausage: the firmer, the longer it has been subjected to the maturation process.

Another important indicator is the proportion of meat used per 100g of finished sausage. The more meat used, the more intense the sausage flavor.

  • For storing the Biter, a cool, dry room with up to 18°C is sufficient.
  • Ideally, theDeer Biter should be vacuum-packed for storage. It is shelf-stable for at least 2 months.
  • Through open storage, the sausage loses water, becoming harder over time. The taste also becomes spicier.
  • When stored openly, white spots or patches may form on the sausage casing. These are salt crystallizations and not mold. They can be safely consumed or simply removed with a brush and water.

Background Information About Our Local Wild Game Species

Red deer are the largest and most powerful antlered animals in our Alps. Globally, around 12 subspecies of red deer exist. The red deer is a species of true deer, characterized among deer species by particularly large and branching antlers. These antlers, prized as hunting trophies, are only developed by males. Originally, the red deer is a species of open and semi-open landscapes – see also Wikipedia.

Due to changing living conditions (road and settlement construction, tourism, etc.) and altered human recreational behaviors, habitats for red deer in our Alps have been significantly restricted.

Unlike deer in the plains that can weigh up to 200 kg, the deer in our Alpine regions typically weigh around 150 kg.

  • Red deer have a range of distinct vocalizations. The most famous is the roaring of male deer during the rut, heard in the fall.
  • Female deer live with their young in herds led by experienced older females.
  • Male deer form their own herds, with only the oldest deer living as solitary animals.
  • Due to disturbances, red deer have become crepuscular and nocturnal, thriving in undisturbed areas up to the tree line (in summer, even up to 2700m).
  • Daily food intake varies depending on activity and ranges between 8 and 20 kilograms of fresh matter per 100 kilograms of body weight.
  • Deer renew their antlers annually, shedding the old ones. The size of the antlers depends on age, nutrition, and the animal’s health.
  • All senses are highly developed in red deer, especially the sense of smell. A large portion of the nasal mucosa is covered with an olfactory epithelium (olfactory mucosa).
  • The red deer has been pushed back into large forest areas by humans. These human-induced changes and the reduction of its habitat lead to wildlife damage. Today, this causes conflicts between hunters, forest owners, and farmers.
