Our organic cured sausage variety is a raw sausage with medium texture and selected organic spices. It matures in the smoking chamber to reach the right level of spice and is carefully stored.

Our organic Kaminwurzen is made from 155 g of organic beef (per 100 g of finished sausage after maturation) and a secret spice blend. This organic raw sausage is preserved through cold smoking, providing the Kaminwurzen with an intense aroma through elaborate smoking and drying.

Good organic Kaminwurzen is a special delicacy in our alpine world. As a traditional snack sausage, Kaminwurzen belongs in the backpack for outings and hikes.

Organic Kaminwurzen Tips | Quality Standards

A decisive quality in Kaminwurzen production is the quality of the meat used. The more pure muscle meat and the fewer connective tissue-rich pieces in the sausage, the higher the quality.

The longer a Kaminwurzen can dry or mature, the more intense its flavor and aroma. The drying and maturation time is typically indicated by the firmness of the sausage: the firmer it is, the longer it has undergone the maturation process.

As another indicator, it is important to note how much meat per 100g of finished Kaminwurzen was used. The more meat used, the more intense the sausage flavor.

  • For storing organic sausage, a cool, dry room up to 18°C is sufficient.
  • Ideally, the organic Kaminwurzen should be stored hanging. It has a shelf life of at least 2 months.
  • With open storage, the organic sausage loses water, becoming firmer and more flavorful.
  • If organic Kaminwurzen are stored openly, white spots or marks may form on the casing. This is due to salt crystallization, not mold. It is safe to eat or can be easily removed with a brush and water.
