This small spelling mistake, however, cannot cause any misunderstandings – the taste speaks for itself! Raclette, derived from the French word „racler“ (to scrape, to scratch), is a Swiss national dish that enjoys great popularity not only in Switzerland but also here.

Our REHMOCTA Raclette Cheese or Racklett Cheese from Rehmer Sennhus

Self-explanatory, 100% produced from the best silage-free hay milk from our Alpine region, we refer to this Alpine cheese as a masterpiece of our cheesemaker with an average maturation period of 3 months. Naturally lactose-free and the table salt used is also iodine-free.

Regardless of the other ingredients for the guests, raclette somehow always fits. Depending on how the raclette is to be enjoyed, we have two recommendations:

RACLETTE BREAD AS HAND-FOOD

You will need good classic black bread slices from the baker as well as onion rings and ground pepper or chili.

Spread the liquid raclette cheese on the bread slice and smooth it out. Then distribute onion rings on top and sprinkle with pepper or chili. Done.

RACLETTE AS A PLATE DISH WITH POTATOES AND OTHER INGREDIENTS

Here, the raclette grill is usually placed in the center of the table within reach of all guests. The potatoes on the plate are “poured over” with the liquid raclette cheese.

Other ingredients could include corn on the cob, mushrooms, cucumbers, onions or pickled onions, olives, … simply everything your heart desires.

Meat is also, of course, perfectly suitable. Don’t forget pepper and chili for all guests who prefer it spicier.

Average Raclette Cheese Requirement per Person

The amount of raclette cheese needed depends on the cheese enthusiasm and hunger of the guests.

However, our experience over the past years shows that a cheese quantity of 150 to 200 grams per person can be calculated for raclette.

  • Raclette is a lightly melting cheese, available in flat round loaves of 29 to 32 cm in diameter and a height of 6 – 7.5 cm and a weight of about 6 kg. The paste is ivory-colored, soft, sliceable, and has no or only few, small holes.
  • The rind is dry and whitish or it is smeared and then yellowish to reddish. It can be consumed if the loaf is made without preservatives.
  • Due to its intended use for grilling, it is designed to melt as evenly as possible without fat separation, making it also suitable for cheese fondue and cheese dishes. Additionally, it can be enjoyed on cheese platters, as a dessert, or as a snack.

How to recognize suboptimal maturation – lower quality? The cheese should be medium-firm but not doughy.

If you want to store large pieces or a whole cheese wheel for more than 2-3 weeks, we recommend using a dishcloth.

To do this, take a clean dishcloth, soak it in salt water (simply add a little salt), wring it out, and wrap the cheese in the damp cloth. Ideally, repeat this process every 2-3 days.

If the cheese turns slightly white or gets spots, it is usually salt or protein crystallizing due to temperature differences. These spots can simply be wiped off.

The use of aluminum foil is possible (but we advise against it), if it is supplemented with many small holes for air supply.
