🍝 Alpine Speckuponara
Ingredients (serves 2): 250g pasta, 2 egg yolks + 1 whole egg, 60g grated AlpenSepp mountain cheese, 2 tsp Bio-Speckup, pepper.
Method: Cook the pasta al dente. Whisk the eggs, mountain cheese, and Speckup into a creamy mixture. Away from the heat, toss the hot pasta with the mixture, stirring in a splash of pasta water for extra creaminess. Garnish with more Speckup.
🥔 Potato Dumplings with a Cheese Core
Ingredients: 600g starchy potatoes, 150g starch, 1 egg, 100g AlpenSepp Rässkäse (cubed), Alpine Butter, Speckup.
Method: Make the potato doughDetecting cheese defects and quality - on the cheese dough. Method: Parboil the cabbage wedges for 10 minutes in stock with caraway seeds. Place on a baking tray, drizzle with melted Alpine Butter, and roast at 190°C for 20 minutes. Sprinkle generously with Speckup before serving.
